1. Roughly chop 2 lbs of smoked chicken with skin (you can sub using 1 cooked rotisserie chicken).
2. In a bowl, mix together 1 cup mayo, 1 tbsp brown sugar, 1/2 tbsp horseradish, 1 tbsp whole grain mustard, 1/3 cup apple sider vinegar, 1/3 teaspoon cayenne pepper, 1/2 tbsp lemon juice, and season with salt and pepper.
3. Add 2/3 of mixture to chopped chicken and mix together (reserve the rest for later).
4. On 8 ABO Potato Sandwich Buns, divide chicken and place on buns. Drizzle with remaining sauce and add 3 sweet bread & butter pickles to each. Add bun top and enjoy anytime of the year!
